Sandwich Slaw

With the Canada Day holiday falling in the middle of the week, I decided I’d make a super long weekend of it and took Thursday and Friday off as well. I had lots of plans for my days off; cooking and eating and cleaning and catching up with old friends. But then on Wednesday morning I discovered a Canada’s Next Top Model marathon on StarTV and the next thing I know I’m still in pajamas, unshowered, at 5:00 pm. It was glorious.
So glorious I spent a little more time on my couch on Thursday. And maybe a little more on Friday (after a delicious brunch with Craig and Kim, of course). The only things I got around to cooking during my time off was a couple of eggs and a boring chicken curry that’s not worth writing home about.
Lucky for us I made a big batch of this slaw on Tuesday evening before I settled into sloth mode for the rest of the week. We paired it with grilled cheese and mango chutney sandwiches, but it would also be great with say, a tuna melt or a grilled veggie sandwich.
Sandwich Slaw
Adapted from Nigella Express
Serves about 4
Ingredients:
1 Red Delicious apple, cored and cut into matchsticks
1 carrot, cut into matchsticks
2 cups finely sliced cabbage
2 tablespoons mayonnaise
1 tablespoon mango chutney
1 tablespoon lemon juice
1/4 teaspoon kosher salt
Method:
1. Combine apple, carrot and cabbage in a large bowl.
2. In another bowl, mix the mayo, chutney, lemon juice and salt. Pour over the salad mixture and combine well.
3. Serve with sandwiches
